Peach and Prosciutto Flatbread

August in Colorado means it’s Palisade Peach season! Growing up in the Midwest, I was never much of a peach fan. Then I moved to Colorado…and the rest was history. My love for peaches grew quickly after having my first taste of a peach from Palisade, CO. So of course I had to make something using Palisade peaches in celebration of National Peach Month. This peach prosciutto flatbread recipe plays on one of my favorite flavor combos: salty and sweet. What’s even better, it only takes a few minutes to put together for those busy weeknights.

What makes peaches from Palisade so special? Peaches which are grown on the western slope of Colorado experience hot summer days and cool nights helping to bring out their natural sugars. I’m talking peaches so sweet and juicy, they need to be eaten over the kitchen sink. Yummm!

Peach Prosciutto Flatbread

Toasted flatbread with a combination of sweet from the peaches and basil and salty from prosciutto and goat cheese. A great quick and easy meal perfect for busy weeknights or lunch.

Ingredients
  

  • 2 mini naan , (I used Stonefire's mini naan)
  • 1 tsp olive oil , divided
  • 1/2 tsp garlic powder , divided
  • 8 thin slices red onion , divided
  • 2 slices prosciutto, cut into thin strips , divided
  • 1/2 fresh peach, thinly sliced , divided
  • 2 oz goat cheese , divided
  • 4 leaves fresh basil, cut into ribbons , divided

Instructions
 

  • Preheat oven to 400 degrees F.
  • Place both mini naan on a baking sheet (either thawed or frozen).
  • Top each naan with 1/2 tsp of olive oil along with 1/4 tsp garlic powder.
  • Arrange toppings as desired starting with red onion and prosciutto, then peach slices.
  • Using a 1/4 tsp, add 6 balls of goat cheese on each naan.
  • Cook flatbreads in oven for 6-8 minutes or until naan is golden brown around the edges.
  • When flatbreads are done, add fresh basil ribbons on top and cut each flatbread into 4 pieces. Serve warm and enjoy!

Not near Palisade, CO to get your peaches directly from the source? No problem! If you have ever been to a local farmers market, you’ve likely come across peaches from Palisade. But if you are around the Western slope of Colorado, be sure to check out the annual Palisade Peach Festival mid-August and grab some peaches.

I love making all sorts of flatbreads with the mini naan from Stonefire. In fact, Costco usually has mini naan in a large package. This means they can be easily frozen making them always available when you need a quick, last minute meal.

There are many ways you can top flatbreads. While peach and prosciutto flatbread topped with goat cheese is my favorite topping combination, I don’t always have those ingredients on hand. Below are a couple more of my go-to topping combinations:
